Wanted to follow through on my post now that the issue has been resolved. I was able to fix this issue by re-inserting my old T-Mobile SIM card, restarting the phone, waiting 5 minutes, re-inserting the Xfinity Mobile SIM card and restarting again when prompted. Awesome!
