I had the same issue on my 2018 suburban with the 6L80e temp reaching 210F during summer driving into town stop and go traffic. Best modification I did was the bypass thermostat delete. Now the temps don't go over 180F in stop/go traffic and cruising highways at 160F.
If you are opting for a manual transmission and an L83, then you have problems. The 6.2 crankshafts are machined to accept an input shaft from a manual transmission, the L83 5.3 liter engines are not.
