This build is amazing for all builds but is even better in the hands of a dex/int build as the weapon scales with dex and intelligence and this means you can use a few spells as well.
Unpopular opinion but moonveil is best used on a pure int build. The projectile of the ash of war only scales with int (not dex). You could use it at melee range, so the strike connects with your target (the strike scales with the weapon's AR, so it includes dex) but I'd rather use unsheathe on a keen nagakiba + scholar's armament tbh. For end-game you're looking at either the 55-60 DEX cap or the 80 DEX cap. The former has a range depending on a weapon's scaling and damage type(s). For example, the St. Trina sleep sword reaches its cap for DEX scaling at 56 DEX. Dragon communion seal is the way to go, even though you're planning to do a pve build. Alternatively, finger/erdtree seal if you want to also include incantations that scale specifically with faith like healing and such.

Most "Dex Weapons" can be turned to Heavy infusion and will have practically the same attack raiting on a str build as they would on a dex build.
