The main reason is probably that Odachi is a newer added weapon, and most builds don't revolve around Odachi/Axe which share the same stats. You get more HP and other benefits from other stats that are around other weapons. Strong attacks though have their place with all weapons. Reasons to use Odachi because its actually really good PVE.
I'm 2/3rds through DotW, lvl 400 with 200 strength and around 40 in all other stats, using a mix of fists, splitstaff, spear, sword and odachi (basically all the strength scaling weapons). Edit 2: Tatenashi 5p is super tanky, but it locks you out of many good dmg bonus from other sets. Personally I use 1p Tate, 2p Kingetsu, 3p Kingo and 3p Izanagi (with yasakani magatama). You can mix Tate, Kingetsu and another set of your choice for a more balance odachi build.
