Ive done builds just using saw cleaver / spear etc and ludwigs holy blade but looking for something a bit challenging and different. (I do not have dlc as playing on PS now) Ive been thinking about maybe doing arcane but i have no idea how that would go for the beginning of the game or where i would get something that would work early game etc

Ludwigs Holy Blade is what's known as a quality weapon. Meaning it scales equally from both Strength and Skill. The optimal stats for a LHB build assuming you want to stick to the 120/150 meta is 50/50. So 50 strength and 50 skill. Ignore arcane. Remove arcane gems and stick to physical gems. That's how you get the best from LHB

Make sure you use blood gems and get both strength and skill higher. i've got a 50/50 build with a +10 ludwig's holy blade and decent gems, I ended up with about ~830 dmg. Maybe your build is bringing it down? for me at least it by far does the most damage.
The holy blade is better for stuns 2h IMO, but the Axe has two circular sweeping attacks that are just so helpful at keeping strong enemies away. The 2h r2 charge for the Axe is a double spin with massive damage and knock back which is fantastic, such a hard choice man. It's easily the best weapon for a quality build and very easy to get. Yes! It's utterly amazing. The silver sword form is fast and has good DPS and the greatsword form transforms you into an one-man demolition crew. Charged R2s with great reach and damage, combo R1s for days and endless smacking with that L2.It has great crowd control when transformed.
