They're weird, in that they are at their most dangerous when you are trying to run away from them. They're fast, aggressive, have long reach, move a lot, and have a ranged attack. But if you turn around and fight them head on, they're super easy to just get under and 80% of their attacks will just go over your head.
Runebear and dragon would be stupid effective against anything that doesn't do a lot of aoe but unfortunately that's most late-game bosses. Crucible Knights almost never get poise-broken and the shield increases his survivability by a lot so I'd go with him. I usually just avoid them. My magic does very little damage (I'm lvl 75) and they hit like tanks. Time your blocks and rolls. Don't get greedy with hits. You'll get it. I literally just run into them as much as possible and start swinging.
