Main difference is Multi-Hit is enabled and the zombie strength is set to weak. Everything else is the same as Apocalypse iirc. Survivor is easier because it has more loot, less zombies and multi-hit, among other things. You can check the exact differences by going into Sandbox, and switching between the preset Survivor and Apocalypse settings.

Random NPCs will attempt to find a weapon then food and shelter and will barricade and hold up in a base. It says in the description of apocalypse "confrontation is best avoided" for a reason. You cannot kill the hordes, they are numerous and will grow back quickly. I recommend the Handy trait or the Repairman occupation. Carry 1 spear in your hands and one in your back, also carry a bunch of them in your backpack as spares.
