Here's my idea: take 5 levels of Alchemist Artificer for the "witch's brew" aesthetic. Then take the rest of your levels in Wizard School of Necromancy. Artificer/Wizard is already a great multiclass, and the fact that it's thematic is an extra bonus. it feels weird to have medium armor and a shield as a witch Fair point.
